Although Kahn's breaks down its beer into many categories for ease of shopping, beer is often categorized into two main groups: ales and lagers. The difference between an ale and a lager is the type of yeast used in fermentation. Lagers use bottom-fermenting yeasts, while Ales are brewed using top-fermenting yeasts, sometimes giving real ales a cloudy or slightly yeasty character and a sweeter, fruity taste.
Typical ales are usually higher in alcohol and will be noticeably fuller and more complex than lagers. Of the various types of beers, Ales have been around for the longest, dating back to the 15th century, and are produced in a wide variety of colors, palates and strengths. Ales include bitters, browns, pale ales, barley wines, trappist beers, and even dark beers such as porters and stouts. The state liquor authorities of some American states wrongly apply the term to indicate brews of more than 4% alcohol.
