There's some oak masking the fruit now, but plenty of wine underneath. Apple, honey and spice flavors linger and it's well-balanced. Drink now through 2010.


Aroma and flavor dominated by orange marmalade (this is usually a bit more lemon-limey in classic years), but firm acids give the fruit vivacity and grip. Sweet and stylish wine with a slow-mounting, firm finish..

Starts out with a swagger, introducing the apricot, pineapple and toast flavors, then picks up again on the finish, where the bracing structure emerges, driving the dried citrus, toast, spice, and mineral flavors to a long conclusion. 96 WS Intense, revealing layer after layer of nuance. Citrus blossom, hazelnut, anise, lemon custard, apricot, smoke and mineral flavors mingle with the firm structure and creamy texture. Harmonious and balanced, with lingering notes of vanilla and mineral salt. A lot of finesse for the appellation.



91 Parker! Orange zest, white pepper, mint, and chalk dust contribute pungency and complexity to the Billaud-Simon 2006 Chablis Vaillons, a brightly citric, slightly lean, cherry pit-tinged, and decidedly mineral exercise in Chardonnay that finishes with real cut and grip. The old vines here have produced something uncompromising and I suspect with at least 7-9 year bottle potential. Billaud pronounces this an excellent example of his preferred style of Chablis. Extremely discreet notes of wood set off the ripest nose among these grands crus in 2008 with wonderfully fresh orchard fruit and pure citrus aromas leading to impressively precise big-bodied and powerful flavors brimming with dry extract and more minerality than usual on the refined, intense and hugely long finish that is quite dry. A wine of class and grace but with no lack of muscle.


Chassagne-Montrachet is an appellation consisting of 350 ha (865 acres) of clayish limestone located south of C\ufffdte de Beaune. Most wine produced in the village is white wine from the Chardonnay grape.


The style of this wines can be characterized as ripe, deeply extracted, full bodied. St. Romain is a yeasty, toasty, creamy scented wine, that has an excellent depth of fruit. These flavors linger in its satiny finish.
